Enchilada Weather

It's no secret that a lot of traditional Thanksgiving food (not sides from DFG, obvs, but OTHER food) is, shall we say, seasoned to please a wide audience. It's a fine approach for a holiday when we're feeding a crowd but sometimes you want a little more zazz in your life. Or at least on your plate. So here to snap you out of that turkey coma, I present Enchiladas with Mole de Stella. Chilies, peanuts, chicken, tangy fresh cheese, probably some spicy roasted peppers and pepitas because that's how I'm rolling these days.

We've got a nice hearty salad too: sweet potatoes and buckwheat, walnut vinaigrette, bitter greens and radishes to balance out those warm flavors. Appropriate for our first frost on Tuesday (Cover your plants, friends!)

I've also heard y'all loud and clear, and I'm offering the chicken liver pâte this week. Treat yourself.
