Menu, week of 7/6
Atlanta United plays their first game in three months Saturday, an occasion that calls for a weird casserole. So here it is, Roast chicken(marinated in spicy coconut vinegar and brown sugar), braised celery, and rice with ranch spices. ALL y’all want to eat this. It’ll call you back to crowds (remember those?), sports bars, and home cooked Sunday suppers at once. It’s that magical.
We’re going ricy and spicy for the vegetarians as well, with baked curry tofu, squash and other veggies, and rice of the brown variety.
The salad is getting serious for the height of summer: seared, chilled eggplant, cherry tomatoes, pesto-y herbs, walnuts, pickled eggs and arugula, with the olivey, spicy, giardiniera vinaigrette.
I got a load of tomatoes from a farmer this week, so I’m making a summery, bright minestrone with braised beef when you want it hot, and a chilled cucumber soup with buttermilk that seriously you guys, I drink from July to September. Get 2.
Speaking of stocking up: I’ve got a wide variety of fantastic meals waiting on your convenience in the freezer. Many are some of my favorite vegetarian and vegan items--super healthy, with a TON of flavor. I’ve marked them down: stock up now.
