Sweet? Sour? Spicy? Crunchy? It's ALL here.
THAT little beauty is this week's salad. XL Banh Pho rice noodles, some tofu, some cabbage and apples--Hello Fall! All the herbs: cilantro, basil, mint, might even get some dill if I'm feeling myself. Tofu for your protein. Toasted cashews and coconut shreds. And this dressing: Thai chili paste, coconut milk, lime, ginger, dark soy sauce, shallot. It'll be making an appearance in a special midweek blog post.
There's fun vegetarian casserole on this week too: lemony/herby rice, seared cabbage, roasted mushrooms, and Delicata squash glazed with French veg stock and baked with fresh cheese. Comforting, not heavy. The kind of thing that will leave you with the energy to walk around the block, and exclaim to your partner or friend, or person on the phone, "It's not 80 degrees tonight! Isn't that refreshing?"
That's all I've got for specials this week: Y'all cleaned me out last week, so I'm restocking the regular menu items like Jerk Chicken, Ramen, and Beef & Grits. Gotta get those meatballs (pork & chicken) together too. Plus, on a personal note, I leave Friday for my very first triathlon ever.
